Who we are
Labs by Good Food Institute IL is an applied R&D initiative focused on the advanced product-performance challenges that still limit the taste and cost parity of alternative meats. We are a complementary, hands-on extension of GFI Israel, which advances mission-driven, non-commercial research through grants and partnerships.
Powered by philanthropy, we aim to expand our R&D pipeline, scale and validate solutions for key product challenges, and develop new initiatives that further accelerate the field.

Next-gen blended meat
PROJECT OVERVIEW
This project explored the potential of “Smart blending” – using low inclusion (~10%) of selected highly functional animal-derived ingredients to produce a significant sensory improvement in a plant-based burger and potentially other versatile applications.
*Collagen did not show significant contribution on its own, but found to contribute to the multi ingredient formulation

Meat alternatives and blended meat producers: Use as baseline for further review of low inclusion rates of highly functional animal derived ingredients, with emphasis on beef tallow, heme-rich and peptide-rich meat ingredients to enhance your product performance.
